Summer cocktails have become more environmentally friendly, thanks to an exclusive summer menu now available at San Carlo Fumo in Selfridges Birmingham.
Sitting neatly alongside Selfridges’ commitment to sustainability, the chic Italian restaurant’s exclusive ‘Nature Kind’ cocktail menu reuses, recycles or upcycles ingredients that would otherwise be discarded as waste. These include leftover citrus juices, rinds, skins and seeds of fruits.
The five cocktails (all £9.50 each) include an avocado bellini, which is a delicious combination of prosecco, elderflower liqueur, avocado and Italicus and a Carnival - a heady mix of cachaca, lime juice, chargrilled pineapple juice, and chargrilled pineapple shrub. Both pair perfectly with the restaurant’s new summer risotto, made with new season peas.
It’s just one of the leading food and restaurant brands to have rolled out exciting summer menus at Selfridges, Birmingham.
Japanese restaurant Tonkotsu has also unveiled six new dishes for summer - two hiyashi ramen - salad, served with chilled, homemade noodles - chicken with ponzu sauce and shimeji, shiitake & enoki hiyashi with ponzu sauce for vegetarians and vegans; miso mushroom ramen; as well as sides, and an Umeboshi milk float sando dessert.

Sushi only serves sustainable fish and is part of Selfridges’ Project Ocean campaign, while more than one third of the menu is vegan or vegetarian, too, so there’s plenty of choice for everyone.
And if you need to cool down, San Carlo Gran Cafe serves no fewer than 18 luxury gelato flavours - all lovingly homemade, including pistachio, salted caramel, coconut and more.
